National S’mores day is this Friday, August 10th, and what better way to celebrate but with a S’mores Meringue Pie Cake! Now we wouldn’t be Cupcakeology if we didn’t give you something crazy and unique. Only now, our crazy and unique can be your new normal, now that we share our very own homemade Cake Batter with you all to bake with at home!
I knew I wanted to do something different for S'mores Day, using our Chocolate Cake Batter, but I wasn’t quite sure how to complete it in a way that would live up to our Cupcakeology name. Rob says, "Why don’t we make a marshmallow fluff meringue on top"? I never even knew that you could add extra ingredients to a meringue without deflating it. So we tried it, and to my surprise, it worked perfectly! I call him “The Executioner” because he always takes my ideas and executes them like a BOSS! Of course we had to have all of the components of a traditional S'mores dessert. So we baked the Chocolate Cake Batter in a graham cracker pie shell. You can certainly make your own crust but to make this a quick and easy dessert, we used the Keebler graham cracker ready crust. After the cake cooled, we spread a generous amount of chocolate ganache on top. The ganache was cooled to a spreadable consistency, yet thick enough to form a nice mountainous layer on top of the cake! Once the marshmallow fluff meringue was to the perfect fluffy consistency, we formed, yet, another mountain of clouds on top of the ganache. Then, using our fingertips, we pinched the meringue to form peaks all over the top, for the perfect, "meringue" look. Using a small, butane torch, we lightly scorched the entire pie to a perfect bronze color. Then, we garnished it with more graham crackers and chocolate ganache! And all of this yummy goodness took less than 1 hour to make!
You can now focus on the fun part of celebrating National S'mores Day, the Cupcakeology way, without all of the fuss and mess of measuring, sifting and wondering if your cake is going to come out perfectly, because with Cupcakeology Cake Batter, it's perfect every time!
1 Keebler graham cracker pie shell
5 scoops of Chocolate Cake Batter
3 cups mini semi sweet chocolate chips
1 cup heavy whipping cream
3/4 cups liquid or 4 egg whites
1 tsp cream of tartar
1 1/2 cup marshmallow Fluff
1 graham cracker to crush
1/2 graham cracker for garnish
Heat heavy whipping cream to a light boil. Pour over chocolate chips and let sit until chips get soft. Then whisk from the inside out until dark and smooth.
Marshmallow fluff meringue:
Whip egg whites and cream of tartar on high, with whisk attachment, until it gets foamy and slightly thick. Then add fluff and continue to whip on high until you get a full, fluffy consistency.
