The best part about being a great baker is creating your own style of desserts that everyone loves and swoons after. We came up with this idea from a birthday cake I made Rob this past July. I baked him a vanilla cake, but I wanted to do something a little different, so I made a strong coffee simple syrup. Which is equal parts water, sugar and coffee grinds and heated until the sugar dissolves. Which only takes about 2 minutes once the water starts boiling. After all, you eat with your eyes first. We scooped the vanilla Cake Batter into a loaf pan about 3/4 of the way. Baked it at 350 degrees for about 40 minutes, or until the toothpick came out clean. Once it cooled, we removed the cake from the pan, sliced it down and arranged them lying flat. Then, we soaked the cake slices with the coffee simple syrup to give it a coffee taste. And I'm telling you, the tender texture of this cake mixed with the roasted coffee taste is somewhat euphoric! I don't know if its because the cake has way more gummy edges than a regular round cake because its a loaf; and you all know what I mean when I say "gummy", but if you're not careful, you could indulge in the entire loaf by yourself if you're not careful!

Once the slices were soaked, we layered them on a plate and began to decorate. This is where you can add any topping of your choosing. We chose a chocolate ganache drizzle, which compliments the coffee flavor very well, fresh strawberries and blueberries, whipped cream and a brown sugar and oatmeal crumble for a little extra texture.

This amazing dessert took about an hour from start to finish to make, with absolutely no extra ingredients that needed to be added.
