My my my! Who would ever have thought that you could make a waffle from cake batter. Well you can! There isn't much you can't do with this cake batter but this recipe is absolutely amazing.
It gives me the nostalgic feeling of when I was a kid at birthday parties. I used to act like I was the ice cream man when I put my ice cream on top of my cake. It had to be professional looking with the exact same size scoops and I always had to add whipped cream. But this banana split waffle cake is on a whole different level. I mean, who doesn't like ice cream and cake?
2 scoops Cupcakeology Vanilla Cake Batter
2 scoops ice cream
All you have to do is:
Open your cake batter and give it a quick mix. Give your pre-heated waffle iron a quick spray with cooking spray. Using an ice cream scooper, scoop about 2 flat scoops onto your hot waffle iron. Be sure not to over do it because the batter will get runny and you'll make an annoying mess. Close the lid and cook for about 2 minutes. Now, don't go anywhere because it doesn't take long to cook.
Once your waffle is cooked and looks deep golden brown, ITS DONE! Grab your oven mitts and grab both handles of your waffle iron and carefully flip your waffle onto your plate. Its best to do it that way because the waffle is too soft to lift up. Let it cool for a few minutes. As I giggle while I type this next sentence; Now it's time to have FUN!
Using your favorite ice cream flavor, we used Neapolitan, scoop 2 heaping scoops of ice cream onto the waffle cake. Split a banana in half and place one half on each side of the ice cream so the banana will stay in place. Drizzle some pineapple and strawberry sauce on top of each scoop. Add chopped strawberries and wet walnuts. I added 3 generous amounts of whipped cream that just made me feel all tingly inside! Then I sprinkled some rainbow sprinkles on top....sprinkles or jimmies, which is the correct term?!? Depends on where you're from or your mood I guess! Ok, then drizzle some chocolate syrup, or chocolate ganache if you're fancy, and of course its not a sundae until you add the cherries on top! Now grab your spoon and DIG IN!
