STRAWBERRY WHITE CHOCOLATE TIRAMISU RECIPE

My…My…My oh how I LOVE Tiramisu ANYTHING! And this Strawberry White Chocolate Tiramisu recipe is NO EXCEPTION!

OK, so let me take you through the experience you’re going to have when you bite into this Strawberry White Chocolate Tiramisu. Then, I will give you my tips on how to make a fluffy, and delicious Strawberry Tiramisu.

At first, you notice the mile high layers of espresso, strawberry and Kahlua soaked lady fingers, light, fluffy and mildly sweet Marscapone Cheese filling, slivers of juicy strawberries and a strawberry speckled, light as cotton, homemade whipped cream topping. And to top it all off, we added chopped white chocolate wafers for added texture!

Now, take your fork, or spoon, whichever you prefer, and let it go through the crunchy white chocolate wafers, right on down each decadent layer. Then, take your first bite and let your taste buds start SINGING and all of a sudden your shoulders start BOUNCING! You know, that happy dance you do when you eat something amazing! You taste the sweetness of the espresso, strawberry and Kahlua soaked lady fingers, the bite of the strawberries and a medley of fluffy goodness all at once! It’s truly a dream come true!

How to make Strawberry White Chocolate Tiramisu

Soak Ladyfingers:

  1. Boil 2 cups of water and espresso for about 5 minutes.
  2. Add vanilla, dark rum, sugar and Kahlua.
  3. Take 1 cup of water and add 5 strawberries. Blend in a blender on puree. (Note: I don’t have a blender, YET, so I mixed in my Nutribullet)
  4. Add pureed strawberries to espresso mixture and mix.
  5. Pour mixture through strainer to leave behind the espresso grinds and strawberry seeds.
  6. Let cool

Egg Yolk Mixture:

  1. Start by separating your egg yolk from your egg white. Add yolks to a heatproof glass bowl.
  2. Add sugar and rum
  3. Place heat proof glass bowl on top of pot with boiling water to act as a double boiler. (Be sure not to fill too high. You don’t want water to touch the bottom of the bowl)
  4. Turn temperature down to a slow boil to ensure your eggs won’t start cooking.
  5. Using an electric, handheld mixer, mix the egg yolk mixture until you get a light pale color and the volume has almost doubled. (About 4-5 minutes)
  6. Take your bowl off of the pot and let cool.

Marscapone Cheese Filling:

  1. Whip the heavy whipping cream until stiff peaks form.
  2. Add Marscapone Cheese in the cream a little at a time.
  3. Fold into egg yolk mixture.

Jen’s Tip: How to Make Marscapone Cheese Filling Light and Fluffy for Tiramisu

  1. Whip the heavy whipping cream with an electric mixer just until stiff peaks start to form. The very moment you see the cream go from soft to stiff peak, stop. If you mix for too long, the cream will start to separate and become runny.
  2. Add the Marscapone Cheese in the whipped cream a little at a time. Whipping JUST until incorporated, about 30 seconds, each time.
  3. Gently fold the Marscapone Cheese mixture into the egg yolk mixture.

Strawberry Speckled Whipped Cream Topping:

  1. In a large mixing bowl, using an electric hand mixer or stand mixer, whip heavy whipping cream and powdered sugar until stiff peaks form. (Do not over mix)
  2. Chop strawberries and gently fold into whipped cream by hand. (About 4 small strawberries)
  3. Save to use as the topping. (Keep refrigerated until ready to use)

White Chocolate topping:

  1. Roughly chop white chocolate wafers
  2. Reserve to use as a topping.

Slice Strawberries:

  1. Slice skinny, long slithers of strawberries to use as a topper. (About 5)

Layering the Strawberry Tiramisu:

  1. Take each lady finger and soak them into the espresso mixture. Starting with the hardened, sugar side facing down, flip twice, ending with the sugar side down. (Note: Flip quickly as the lady fingers will get too soft and break)
  2. Using a 9×13 inch pan, layer the fingers until the bottom of the pan is covered. Leaving a small space in-between.
  3. Spread half of the Marscapone Cheese and egg yolk mixture on top of the lady fingers, evenly.
  4. Slice the large strawberries into very thin slithers and layer on top of the Marscapone Cheese and egg yolk mixture.
  5. Repeat soaking the lady fingers and layer on top of strawberries.
  6. Spread the remaining Marscapone Cheese and egg yolk mixture on top of the lady fingers.
  7. Spread the strawberry speckled whipped cream topping over mixture.
  8. Add the chopped, white chocolate wafers and spread evenly.
  9. Sprinkle slithered strawberries on top or make a nice arrangement of strawberries on top to display.

Refrigerate for 12-24 hours to set.

Ingredients

Espresso Mix

  • Cups Water Reserve 1 cup to puree strawberries
  • 1/4 Cup 2 TBSP Espresso
  • TBSP Vanilla Extract

  • TBSP Kahlua
  • 5 Strawberries
  • 36-40 Lady Fingers

  • 6 Large Egg Yolks
  • 1/2 Cup White Granulated Sugar
  • 2 TBSP Dark Rum

Marscapone Cheese Mixture

  • 1 1/2 Cups Heavy Whipping Cream
  • 16 oz Marscapone Cheese

Strawberry Speckled Whipped Cream Topping

  • 1 1/2 Cups Heavy Whipping Cream
  • 1/4 Cup Powdered Sugar
  • 4 Strawberries

Topping

  • 12 oz White Chocolate Wafers
  • 5 Strawberries
