One Pot Coconut Curry Chicken Recipe

This SUPER easy One Pot Coconut Curry Chicken recipe is, hands down, the tastiest, most flavorful chicken recipe we have on our daily, dinner menu! I mean, who doesn't eat chicken at least 3 times a week? Unless you are a Vegan or Vegetarian. {Been there, tried that, got the t-shirt, but it's now too small-HA!}

Rob and I are always looking for a new way to cook chicken. This one pot coconut curry chicken recipe has stuck with us because it's a winner with the children! And that makes life sooooo much easier when the children don't complain. They love all of the spices in the Jamaican Curry Powder. We like to use the Jamaican Choice brand.  It's easy to get from the grocery store, and the blend of the Jamaican spices are delish!

Ingredients in One Pot Coconut Curry Chicken

  • Whole chicken; chopped and deboned
  • Red, orange or yellow peppers
  • Onions
  • Coconut milk
  • Jamaican curry powder (We prefer to use Jamaican Choice brand)
  • Salt and pepper
  • Water

Different variations of coconut curry chicken

You can easily use other curry powders and pastes as well. We've made Thai curry chicken. You would just substitute the Jamaican powder for the red curry paste. We've also made Indian curry chicken using tikka masala. You can eat like an experienced international traveler right in your own kitchen! Not to mention, keeping the dinner menu fresh, just swapping out a few spices here and there!

The one pot coconut curry chicken dish also pairs well with different side dishes. You can eat it over white rice or yellow rice. Add some cabbage or our yummy Sautéed Green Beans Recipe with Diced Tomatoes recipe! Rob likes to really get authentic and make us a few fried plantains. This recipe is very versatile and did I mention, super easy!

What kind of chicken to use

Rob got all extra fancy and cut up a whole chicken. That way we had every part of the chicken in the curry recipe. I like it when everything is all stewed together and you really don't know the dark from the white meat. However, if dark meat isn't your thing, chopped chicken breast will taste just as good. And vice versa if you are only into dark meat; thighs and legs are yummy too.


How to make One Pot Coconut Curry Chicken

This is the fun part! Chop your whole chicken {into legs, thighs, breast and wings}. Then cut each part into 2-4 individual pieces. Or if you are just using chicken breast or thighs, also cut them into about 3-4 individual pieces.

Next, julienne the pepper, onion and carrots.

Combine all of the ingredients into a large pot.

Sprinkle 4-5 tablespoons of curry Jamaican Choice curry powder over the meat and vegetables. Add salt and pepper to taste, minced garlic and coconut milk. Stir everything together until well incorporated and cover. Simmer on low heat for about an hour or until the chicken is tender and completely cooked. {Do Not Overcook}!

  • 1 whole chicken
  • 1 pepper
  • 1 onion
  • 2 carrots
  • 1 13.66 oz coconut milk
  • 4-5 TBSP Jamaican curry
  • salt
  • pepper
  • 2 tsp minced garlic


  • Cut whole chicken into thighs, legs, breasts and wings. Then further cut into individual pieces. 
  • Julienne the pepper, onion and carrots.
  • Combine diced chicken and vegetables into a large pot. 
    • Sprinkle the Jamaican curry powder, salt, pepper and minced garlic over meat and vegetables. 
    • Add the coconut milk.
    • Stir everything together until well incorporated. Cover and simmer on low heat for about an hour. Or until the chicken is tender and fully cooked. 
    • Serve warm and enjoy!


    If you aren't comfortable with chopping a whole chicken, diced chicken parts will also work!
