LIGHT-N-FLUFFY STRAWBERRY PANCAKES

Sundays, in our household, means PANCAKE DAY! If our kids look forward to nothing else during the week, they are looking forward to PANCAKE DAY! Especially these Light-n-Fluffy Strawberry Pancakes!

I think what they love most about this strawberry pancake recipe is the light and fluffy texture, mildly sweet (leaving room to add other sweet ingredients and of course…syrup), and the crispy, buttery taste around the edges of the strawberry pancakes!

Our daughter, Jaye, in particular, LOVES to add different ingredients to her pancakes on PANCAKE DAY! So, last Sunday, she suggested adding strawberries in her pancakes. SURE! Why not?!? We had some leftover in the fridge! “Have at it Sis”, I told her!

The addition of the strawberries to this SUPER EASY pancake recipe added a light, spring-like taste to our traditional PANCAKE DAY breakfast. KUDDOS Jaye!

This Strawberry Pancake recipe is so super simple to make from scratch! And NO! I’m not just saying that because we are professional cake bakers:) Seriously, your kids can actually follow this easy pancake recipe themselves; maybe with a little help on the griddle though!  But trust me, they will be so excited that they accomplished something on their own, if you let them, and it will absolutely turn out DELICIOUS!!! 

 

HOW TO MAKE STRAWBERRY PANCAKES 

Strawberry pancake ingredients

  1. Using one medium to large bowl for the entire recipe, add the flour, salt, baking soda, baking powder and sugar. Whisk the ingredients around a little to incorporate everything together.
  2. This is the fun part…make a well or a little hole in the middle of the dry ingredients and add the egg, vanilla extract, melted butter and rum. Note: The rum is optional. I just feel like adding a dark or flavored rum makes everything taste a little extra special. But don’t worry, the alcohol cooks off once the pancake batter hits the griddle. Your kids will NOT get a buzz off of these strawberry pancakes:) I’m not that kind of mama:)

    1. Now add the buttermilk! I love to cook and bake with buttermilk! Specifically in this strawberry pancake recipe, it makes them super fluffy, light and full of flavor! 
    2. Whisk your mixture together to form a pancake batter. It will have lumps, which is ok! Note: If you like a thicker pancake consistency, add less buttermilk. 
    3. Chop 4 medium sized strawberries sortuv fine, and add them into your pancake batter. Give it a quick mix and watch how it turns your pancake batter a light pink color! I love that:) Note: Feel free to add more strawberries! It certainly won’t hurt! 

     

    COOKING YOUR STRAWBERRY PANCAKES

    1. Heat your griddle, or non-stick skillet on medium heat setting. Cooking the pancakes on a medium heat setting will ensure you a golden brown, crispy, pancake color on the outside and that nice, light and fluffy texture on the inside! Cooking the strawberry pancakes too low will give you a light color on the outside and gooey inside and it will just plain take FOREVER! Cooking the strawberry pancakes too high, well, they will just cook too fast and BURN! You definitely don’t want that!
    2. Checking that your griddle or skillet is at the right temperature, add canola oil. My hubby taught me this trick to get those golden brown, crispy edges that you will love! 
    3. Add your pancake batter to the pan. NOTE: I use a 1/4 cup measuring cup which gives me the perfect size pancakes that my family loves every time! I also like to make 3 pancakes at at time to have room to flip those bad boys without messing them up or them touching the other pancakes. WE DON’T LIKE TOUCHING:) HA-HA!
    4. Once your pancakes start to bubble at the top, take a spatula and flip them over. Now watch the magic happen! You will see them risin’ and fluffin’ up all nice-like! (In my southern belle voice)!
    5. Next, take a peak underneath one of the pancakes, if they are golden brown and to your liking, then it’s time to remove them and start on your next batch!
    6. Repeat the process until all of  your pancake batter is gone! Note: You can save the pancake batter in the refrigerator for up to 3 days!

Ingredients

  • 1 Cup All purpose flour
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 2 TBSP granulated sugar
  • 1 large egg
  • 1 TBSP melted butter
  • 1 tsp vanilla extract
  • 1 tsp dark rum optional
  • 1 1/4 cups buttermilk
  • 4 strawberries
  • 3 tsp canola oil reserve for cooking

Instructions

  • In a medium bowl, add flour, salt, baking soda, baking powder and sugar. Mix well to incorporate.
  • Make a well, or hole in the center of your dry ingredients and add your egg, melted butter, vanilla extract, rum and buttermilk.
  • Mix well until all ingredients are incorporated. Its ok if the batter is lumpy. 
  • Chop your strawberries and add them to the pancake batter, then mix. 

Pancake Cooking Instructions

  • Heat your griddle, or non-stick skillet on medium heat setting.
  • Checking that your griddle or skillet is at the right temperature, add canola oil.
  • Pour pancake batter onto griddle, evenly spacing them out to have room to flip.
  • Once your pancakes start to bubble at the top, take a spatula and flip them over.
  • Next, take a peak underneath one of the pancakes, if they are golden brown and to your liking, then it's time to remove them and start on your next batch! 
  • Repeat until all of your cake batter is gone. 
  • Top your strawberry pancakes with your desired toppings or using one of the suggested toppings mentioned above. 
  • Enjoy!
