Avocado toast is like ~Caviar~ in my household! Our two kids treat it like a rare delicacy, as if they can only have it on special occasions. Little do they know, they can have it everyday of the week if they asked!

Well, the ~GREEDY~ one, Robert, does! His motto is, either I ask and she says YES, or I wait until she goes to work and make an extra helping for myself!

Side bar, I KNOW we can’t be alone in this “SITUATION“! I mean, how many other parents spend all day EVERYDAY trying to keep their sons from eating up ALL of the groceries that you bought for a WEEK, in one DAY? Yes, I know, they are growing, very active boys but I’m just sayin’! A mama’s gotta budget here. Please COMMENT and lets discuss this. It’s like a SECOND dog’gon JOB!

Ok, sorry! Back to this amazing avocado toast recipe!

  1. Start with 2 slices of your favorite Artisan bread. It’s always FUN to experiment with different kinds of bread, each time you make it, for a different taste! We love garlic and herb!
  2. Mix Extra Virgin Olive Oil and seasonings {Our favorite is Italian Medley Seasoning Blend, by Mrs Dash} It has everything you need in a blend without the added salt!
  3. Brush the seasoned olive oil over your slices of bread. Be sure to go to the edges as they will make for a nice CRUNCH when you bite into it!
  4. Put the seasoned slices of bread under the broiler and let it toast until they get a nice golden brown tone. That way, your seasonings set into the toast for a complete FLAVORFUL experience.

Sliced artisan bread, sliced avocados, sun dried tomatoes and italian parsley     Toasted artisan bread, avocado sliced in half

  1. Using 1 slightly firm avocado, slice it around, in the middle. Open it and take the pit out.
  2. Using a small bowl, roughly mash the avocado with a fork. You don’t want to over-mash the avocado like guacamole. You want to leave some texture to it.
  3. Sprinkle in a pinch of salt and an even BIGGER pinch of cracked pepper. Actually, extra cracked pepper is nice; if you’re into pepper like that!
  4. Add about 1/2 TBSP of lemon juice from a lemon for the extra Zing!
  5. Spread the avocado over your toast.

  1. Bruschetta: Chop up some SWEET Cherry, Plum or Roma tomatoes and mix with olive oil, Mrs Dash Italian Medley Seasoning Blend, pinch of salt and cracked pepper and chopped Italian Parsley. Add on top of your avocado toast.
    • We used a medley of Sunrise Bumblebee Cultivar tomatoes. Cultivar tomatoes are Heirlooms that are open pollinated and have a great resistance to diseases. They come in different medleys of Roma, Cherry, Plum, Black Cherry and Kumato, to name a few.
  2. Sun-dried Tomatoes: Slice a few sun-dried tomatoes in half, add a drizzle of olive oil (only if sun-dried tomatoes are not already in oil) and fresh Italian Parsley. Add on top of your avocado toast.
  3. Sunny Side Up Egg: This one is my daughters favorite! She loves when the yolk mixes and runs all over the avocado toast!

The well seasoned and toasted artisan bread along with any variation of avocado toast toppings you choose, will make for a complete breakfast on the GO! Using these 3 extra avocado toast variations can make planning for breakfast SUPER easy! You can use each variation per day!

Enjoy! I know we do!
